I’m busy these days – new job and studying (yes indeed) are keeping me quite occupied. Making and enjoying soulfood is good for the nerves, the brain, and for la taille it is not too bad either as long as I still find enough time to cycle (I’ll always make sure to have time for that :o) )
So I made cookies and – for the first time – chocolate.

The chocolate

The cookies:





225 g Alsan (vegan butter)
210 g sugar
2 tbspL cinnamon
1 tbsp almond extract
3 – 4 tbsp. pure cocoa
3 tbsp oat milk
480 g spelt flour
¼ tbsp baking soda
and either frozen blueberries or nuts for the topping.
Mix Alsan with sugar and spices. Add almond extract, cocoa and oat milk, stir again and then add flour and baking soda. Form a ball, wrap in cling film and put it in the fridge for at least 3 hours.
Pre-heat oven to 180 °C.
Use cookie cutters of any kind, then decorate the cookies with frozen blueberries or nuts and put them in the oven for about 10 – 15 minutes (depending on your oven). Wait for the cookies to cool down and enjoy :o)
