Critical Cookie Mass

I’ve been given two new biscuit cutters lately, in addition to the two I already had (a heart and a star), so I thought why not combine my regained love for cycling and addiction for cookies – plus it’s that time of the year anyway – and start the cyclelicious Christmas bakery.
And so I did, I made ordinary butter cookies and Spekulatius (trad. German almond cookies). They may not look overly pretty but they taste nice. Arranged on a big plate they remind me of our monthly Critical Mass :o)

PS. My recipes are vegan, I use apple purée as a substitute for eggs. Works very well.
